Welcome back to the Empowered Kitchen. I'm Jenna Zaffino, your resident health coach for the PCN Wellness Hub. Today, we are making terrific toast. What makes it so terrific, you ask? It is going to add more punch for your palate. It is going to add more nutrients to your nourishment. And finally, it is going to fill you up like you just had a meal fit for a queen. Let's get started. So while we talk about the flavors we have, let's go ahead and toast our first pieces of toast.
I like mine quite crispy with a little bit of a browning on the edges. Everyone is different, so you do yours how you see fit. For our toppings today, I have some scrambled eggs, some peaches, some tahini spread, we have some cream cheese, ricotta will also do nicely for this one. I have some thinly sliced chicken breast, avocado, as is the trend of the season, and finally, some sun-dried tomatoes, some sliced jalapenos, and also some mashed sweet potato. We're going to get really creative with this toast. We're almost done with our first two pieces. I'm excited to get going. You know what that sound is? We're ready for our first piece of toast.
Whoo. Alright. We're going to start with something creamy, sweet, and savory. It's cream cheese, tahini, and some sliced peaches. So we're gonna take just a little bit of cream cheese across the top, give it a nice even spread. And honestly, you can add as much cheese as you like because this is your toast and you get to do with it what you like. Next we're gonna just layer some of those sliced peaches on. This one was very very very ripe.
I wanted it to look a little bit more uniform but you know, it's gonna be definitely flavorful. Alright, we've got the peaches next and we're gonna take a little tahini and drizzle it over the top. Now tahini is kind of like peanut butter, it's a sesame texture. It has both a sweet and savory aspect to it depending on how you flavor it. And then finally, for a little extra, we're gonna drizzle some honey on the top. We got the good old fashioned Honeybear here and we're just gonna do a light little drizzle across the top and we are good to go. So you've got this beautiful peaches and cream and savory and sweet toast and this is a wonderful one for breakfast or just a snack any time of the day. Next up, this is kind of like a loaded Thanksgiving style toast so I'm gonna take my mashed sweet potato that I premade and just kinda spread it out over the toast.
Trying to be as design conscious as possible. And it's just simply, honestly I just threw the sweet potato in the air fryer for about a half hour, sometimes a little more depending on the size of the sweet potato. We've got wonderful layer of potato there, and then we're gonna start to layer on the chicken. Now, you can do as many layers as you like. We've got protein and some great carbohydrates as part of this meal, but we're gonna need some healthy fats as well. So we've got some sun dried tomatoes that are with oil, in oil, olive oil, and those will help to bring a little flavor punch to the entire meal, but also something that I like to do here is go full tilt with the thanksgiving theme and put on a few pumpkin seeds. Just a little bit of a drizzle of salt and looks fit for a beautiful meal. Next up, a favorite, starting with eggs on toast, adding a little avocado to the mix and then a secret surprise ingredient.
So these are just some simple scrambled eggs. We're gonna make sure that they're placed nicely. As you know, when you put eggs on toast, sometimes it gets a little bit messy, so we always wanna have something binding like a sauce that will help us, keep everything held together. Now on top of this I'm gonna layer a few slices of avocado for some healthy fats and then on top of that we're going to add a tiny bit of chimichurri sauce. Now, this is gonna give you just a little bit of a spice component, a little kick. Of course, you can add whatever you like to it on top, but I like the just a little bit of extra green and extra spice and extra kick. And then if you really like spice and you wanna take it up one more notch, you can absolutely add just a little jalapeno onto the top. This is gonna be your spicy kick, eggs on toast.
For our final piece, we're gonna do a play on peanut butter and jelly. We'll start with some natural peanut butter, just about a tablespoon there. We'll get ready to spread that about. Nice and gooey and yummy. And then from there, we're going to place some blueberries on top. It's a little you could use whatever berry you like. It's a little different take on an old fave. Once the blueberries are there, we're just gonna give them a little mash so they don't roll off, so we can get that kind of jammy texture.
And again, add as many or as few as you like. And then from there, we're also just going to add a little bit of cream cheese, little schmear, just give it a tiny little additional savory component. Almost like a blueberry cheesecake, almost. On top of this one I'm going to add some coconut. This is unsweetened flake coconut and oops, a strawberry got in there but we're not mad about that. And then of course, if you want a little drizzle of your honey, this is definitely a toast to be drizzled. And there you have it, lots of different flavors for lots of different occasions. Whether it's a snack or part of a full meal, you can experiment with many different things and many different flavors on top of your toast.
Just have fun with it. Spice it up and season however you like, and remember that sometimes the things that are left over in your pantry are just waiting to be your next great dish. You are strong and resilient, and the small moments matter. I'll see you next time.
